This is a quick, easy and delicious weeknight meal that the entire family with love. Kids love to assemble their own gyros and if you like cooking with your kids, this is a very fun recipe to make. The ground turkey is spread thin and baked on a sheet pan, giving the same look and feel of the thinly sliced gyro while minimizing the time and effort involved. Feel free to change around the flavors to suite your tastebuds - shawarma seasoning would be great as well with hummus or tahina. Hope you enjoy!


Prep Time: 5-10 min for gyros, 5-10 min to assemble

Bake Time*: 25 min

Total Time: 35-45 min

*Non-active time when you can do whatever you need to do!


Ingredients:

Gyros:

1 lb ground Turkey

1/2 cup breadcrumbs (unseasoned)

1/4 cup warm water

3 cubes frozen crushed garlic (or 3 cloves minced fresh garlic)

1 tsp dried dill or 1 Tbsp fresh dill (optional)

1 Tbsp Greek seasoning OR mixture of 2 tsp garlic salt and 1 tsp oregano

1/2 tsp salt

1/2 tsp pepper (optional)

1 Tbsp olive oil


4 Pitas

Tzatziki (store bought or homemade, recipe below)

Cherry tomatoes, halved

Choose your own adventure with any other preferred toppings (lettuce, cucumber, onion, etc)


Directions:

Preheat oven to 400. Line a quarter sheet pan** with parchment paper and spray with avocado oil or olive oil.


In a bowl, mix together the breadcrumbs, garlic, dill, olive oil, salt, pepper and Greek seasoning. Add 1/4 cup warm water and mix to combine. Add the Turkey and thoroughly mix with your hands. Place the Turkey on the sheet pan and press out flat with you hands over the entire quarter sheet pan. Your sheet pan should be entirely covered with the ground turkey mixture.


Bake for 25 minutes until cooked through and slightly brown on top.


While baking, make the tzatziki (unless using store bought).


Remove to a cutting board and cut the turkey gyros into strips.


To assemble the gyros:  schmear tzatziki on the pita, place the gyro strips, tomato, and any other toppings you prefer in the pita, fold over and enjoy.


Tzatziki

1/2 cup Greek yogurt (could also use a vegan sour cream or cream cheese substitute)

1 Persian/small cucumber, grated and moisture squeezed out

1/2 tsp salt

1 Tbsp fresh dill (optional)

1 clove minced garlic or 1 cube frozen crushed garlic

Squeeze of lemon juice


Mix together, place in fridge until ready to use.


**if you don't have a quarter sheet pan, a half sheet pan or cookie sheet will be fine but you won't fill the entire surface with the turkey mixture
